ok, what i think you're asking is how do you acquire the demo for PS3... although i cant tell for sure.
heres what happened:
if you pre ordered at gamestop you were given a card with a code to download the 5 minute demo featuring the cardinals vs. the steelers, for both systems, which was to be activated on july 23rd. the card had instructions on where to go to redeem it.
however, for Xbox 360 users, if you have a gold Xbox Live subscription(and honestly, who doesnt have a gold subscription?!) you have access to downloading a different Madden demo featuring 1 minute quarters and features the Cowboys and the Giants.
ps3 people are going to have to wait on this 1 minute Dallas vs. New York(N) demo, probably about a week or so.
why do people on ps3 have to wait a week for this 1 minute demo? i honestly have no idea, thats just the way it is unfortunately.
